Is long elevage pét-nat an oxymoron? Maybe, but we’re doing it and its delicious! This sparkling Savignon Blanc aged on its lees for two years, developing a rich texture and a fine bead (bubbles) that only comes from extended lees contact. We disgorged by hand in June of 2020 and topped the bottles with a trial lot of skin contact Sauvignon Blanc that we are very excited about. The Sauvignon adds texture and richness which complements the bright freshness of the base wine. Long and complex, this wine walks the line between serious and fun in a way that is rare and refreshing.
We pair this wine with just about anything short of steak. It is very food-friendly and plays equally well as an aperitif with cheese and meats. Serve chilled, but not too cold. Or serve too cold and let it open up as it warms.
No added sulfites.
