100% Pinot Noir, from remote Potter Valley in Mendocino County. The fruit was foot crushed and soaked on the skins for 5 hours, extracting color and flavor. Then we gently pressed to a mix of French oak puncheon and stainless steel barrel where it naturally fermented to dryness. We then racked to stainless for the winter. Once malolactic finished the wine was racked off its fine sediment, settled until limpid, and bottled using gravity. Unfined and unfiltered.
