AmByth Estate sits atop a high ridge overlooking Templeton Gap, surrounded by steep sloping vineyards lined with olive trees. The grounds are tended by chickens and sheep and the distant horizon obscured by the majestic Santa Lucia Mountains. Anxious to take it all in, we convened just after dawn though we could see only Scarlett—resident guardian Llama—through the dense morning fog that drifted in from the Pacific overnight.
